The temperature of the water as it emerges should be stable from day to night. Much itís source is underground and it is there the temperatures would be controlled, and viscosity set.

My guess is that is may have something to do with the surface material on which the water is flowing. Its temperature, the amount of water it is holding and such would vary greatly day to night and therefore its ability to absorb water would change. The water while on the surface may also be impacted as you said, it viscosity changing somewhat as the temperature changed on the warmer surface materials.
