I try to plan my trips to the area so the full moon will occur during the middle of my trip. I find that especially during the shorter daylight hours of winter, I can still explore and enjoy the scenery after nightfall. After 30 minutes or so with lights off, your eyes will adjust and you'll be amazed how bright it is.
While driving at night, which you certainly can do, just take it easy and with good headlights you should be fine.
