I must admit that even though I've been roaming around these parts for around 26 years, I still occasionally make the mistake of too little preparation including too little water.
I've had two employees who after having a rather severe "episode," were no longer able to handle the heat. One was a 40 year plus resident of the Death Valley region. I contend that a single occurence of heat stroke upsets one's internal "thermostat."
