advice on lodging in Death Valley

My husband & I will be coming to DV in May from Las Vegas for 4 days. The Furnace Creek Inn will be closed by then (my first choice). We want to stay in a place with peace & quiet, good food & beer, great views & close to hiking (because we will start our hiking very early in the morning). Any suggestions? It is hard to tell from the websites where we should stay.
