About 40 years ago I was working on a sonar system and read a considerable amount on oceanography. The height of a wave is proportional to the velocity of the wind and the depth of the water. i.e. you are not going to get a 20 foot wave out of a 1 foot deep mudpuddle. I never memorized the formula but it can probably be found in any oceanoggraphy book. If I remember correctly, the biggest factor in evaporation is the temperature. The higher the temp the greater the Brownian movement and more molecules escape thru the surface tension of the water (evaporate). Wind also disturbs the surface tension allowing more molecules to escape. Humidity definately has an effect on evaporation. Thus, there is probably a yard long equation involving wind, temp, humidity, density of the water, the color of ones eyes, etc that makes a wild ass guess on the rate of evaporation.
